Using an exclude file in dos xcopy batch file

While using xcopy to backup files that have been modified since the last back up, and since my back up drive cannot hold all the digital pictures on the main drive, I'm trying to learn how to use the EXCLUDE command and variables to identify certain directories and sub directories and EXCLUDE them from the back up.
